Shrimp Alfredo with Spinach

I wanted to surprise a friend of mine who does not eat meat. So I began looking around the kitchen to see what I had that I could throw together and bring to her job and surprise.
This recipe is a result of that effort.
She and her co-workers loved it.
So it is a keeper and I am sure I will be making it again.

Ingredients
- 16 oz. box of penne pasta
- 4 cloves of garlic, minced
- 1 1/3 cup of heavy cream
- 1 1/3 cup of milk
- 1 cup of asiago cheese
- 1 cup of mozzarelle cheese, grated
- 1/2 cup of parmesan
- 1/2 cup of water from cooked penne
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. red pepper flakes (or according to taste)
- 4 cups of spinach
- 1 tbls. of olive oil
- 20 medium size shrimp, patted dry
Directions
- Bring a pot of salted water to a boil and cook penne pasta according to directions on box.
- Heat up a large skillet on the stove and then add olive oil, when the oll is hot add the garlic, cook until it is fragrant just a minute will do it, do not let it burn.
- Add the shrimp, brown for a minute on each side and remove from the pot.
- Scrap the bottom of the pan to loose the fond on the bottom and add the heavy cream and the milk. Stir good.
- Add the asiago cheese and the grated mozzarelli to the pot and stir.
- Add the salt, pepper and red pepper flakes.
- Add the cooked pasta and the spinach to the pot. Stir good until the spinach cooks down.
- Add the shrimp back to the pot and cook for five minutes on low heat. Add the pasta water, stir again making sure all the pasta has sauce on it.
- Add the parmesan cheese and serve immediately.
