Rosemary's Signature Salad with Black Poppy Seed dressing

This is one of the speciality salads at my restaurant. The combination of ingredients might seem strange to you but together they are wonderful. The salad dressing is very close to the Virginia Brand Rich Poppy Seed Dressing and is as good without the preservatives that they add into it. There is nothing like making your own and eating cleaner.

Ingredients
- 1/2 cup of black beans, rinsed and drained
- 1/2 cup of pine nuts
- 8 pepperoncini's - small
- 4 tbls. of goat cheese
- 1/4 cup of artichoke hearts
- 4 cups of romaine lettuce - torn into bite size pieces
- 1/4 cup of white vinegar
- 1/4 cup of apple cider vinegar
- 1/3 cup of white sugar + 2 tbls.
- 1/4 tsp. of rosemary extract
- 1 cup of canola or vegetable oil
- 1 tsp. salt
- 1 tsp. of black poppy seeds
- 1 tsp. of onion powder
- 1 tsp. of garlic salt
- 1/2 cup of water
- 1 tsp. of basil
- 1/2 tbls. of evaporated milk
- Ground pepper to taste
Directions
- In a blender or food processor add the vinegars and sugar and blend until the sugar is combined.
- Add to the blender the salt, poppy seed, onion powder, garlic salt, rosemary extract and basil, mix thoroughly.
- With the blender on low add the oil very slowly so it combines easily.
- Add the water and the evaporated milk while the blender is on low. Mix on high for 20 seconds. Set aside.
- In a small non-stick fry pan, place the pine nuts and roast them lightly, about 1 minute, moving them around so they do not burn.
- Place the torn up romaine in a large bowl. Pour over the salad dressing to your liking. You will have a lot of dressing left over. Toss and place on your plate. This will make two salads.
- Place black beans in a line from center to end of plate, across from it place the pepperoncini, turn the plate, place the pine nuts and the artichoke hearts using the same pattern.
- Place the goat cheese on the top center.
- Sprinkle ground black pepper to taste. Serve immediately.
