Pumpkin - Apple Streusel Muffins

It is the beginning of fall and the flavor that is most popular this time of year is pumpkin. So here I have created a pumpkin muffin with apple inside and an apple streusel on top.
It is easy to make and quite pleasing to the appetite. Get a nice cup of pumpkin flavored coffee, latte, or tea, grab a chair and sit and enjoy.
I love decorating which begins this month with Halloween, Thanksgiving and then Christmas. While fall is not my favorite season, spring is, fall runs a close second.

Ingredients
- 1 cups white sugar
- 1 cup dark brown sugar
- 2 1/2cups all-purpose flour
- 1 tbl. pumpkin pie spice
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs, slightly beaten
- 1 cup of canned pumpkin puree
- 1/2 cup of vegetable oil
- 2 cups of apples, peeled and cored and diced
- 2 tbls. of all purpose flour
- 1/4 cup white sugar
- 1/2 tsp. ground cinnamon
- 4 tbls. butter
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Line 18 muffin pans with paper liners.
2. Sift together the flour, sugar, brown sugar, pumpkin pie spice, baking soda and salt.
3. In a separate bowl, mix together the (slightly) beaten eggs, pumpkin and oil.
4. Add pumpkin mixture to flour mixture, stirring until moist. Fold in the apples.
5. Spoon batter into your paper liners in your muffin pan.
6. In another small bowl, mix together the ingredients for the streusel, flour, sugar and cinnamon. Cut the butter into small slices and cut it into the mixture until you get a coarse crumbly look. Sprinkle this topping evenly over the muffin batter.
7. Bake in your preheated oven for 35 to 40 minutes, or until a toothpick comes out clean when inserted into the muffin.
