Caribbean Seasoned Rice

Every Thanksgiving my son-in-law's mother brings seasoned rice as one of her dishes to share. What a combination of flavors.
I have never been much of a rice maker. I always found it a challenge to get just the right consistency and it doesn't help that all of my married children have spouses that can cook rice with their eyes closed. So yea I was a little intimidated. So I bought a rice cooker and have used that for a few years. Not venturing away from it.
The good news is, I am over that, and rice is really not that difficult to prepare. The first thing I learned was DO NOT follow the directions on the package. They want you to add too much water and it will never come out to a texture that is soft, dry and tasty. Once I learned that trick it was easy after that.

Ingredients
- 2 cups of white rice, uncooked
- 1 can of red kidney beans, 15.5 oz.
- 3 slices of hard salami or 1 link of sausage cut into small pieces
- 1 small yellow onion, diced
- 1 clove garlic, minced
- 1/4 orange pepper, diced
- 1/4 red pepper, diced
- 1/4 yellow pepper, diced
- 1 tbls. red pepper flakes (optional)
- 1 packet of ham flavored concentrate-goya
- 1 packet of sazon coriander and pimento
- 1 packet of sazon tropical
- 1 tsp. of celery salt
- 1/2 tsp. of accent
- 1 tsp. black pepper
- 1 tsp. salt
- 1 tsp. cilantro
- 1 small can of tomato sauce, 8 oz.
- 1 tbsp. olive oil
- 1 to 1 1/2 cups of water
Directions
1. Place the oil in a medium size saucepan on medium heat and put in salami. Cook for a few minutes until browned.
2. Add the peppers, garlic, and onions to the salami and cook until the vegetables are tender, about 5 minutes.
3. Add the seasoning packets, celery salt, salt, pepper, cilantro, and accent to the pan now. Stir good making sure all the vegetables are covered with the seasonings.
4. Add the two cups of uncooked rice ( I like Uncle Bens), mix it good and let the rice get coated with the seasoning as well. Once it is stirred good you are ready to add the other ingredients.
5. Add the can of tomato sauce and the can of undrained kidney beans. Stir that all good.
6. Add one cup of water and let it cook on low heat uncovered. When the rice takes up all the moisture in about 5 minutes and another 1/2 cup of water. You must continue to stir the rice, not letting it stick to the bottom of the pan, it will get dry but let it continue to cook on low heat until it is soft, about 15 minutes.
