Caribbean Jerk Hot Wings

I have a lot of recipes that I have developed for hot wings. These are however, by far the best. I have a wing that is called a "stupid hot wing" because it is that hot. I will share that with you through football season.
This recipe I get the most compliments for its hotness, so if that is what you are going for along with a unique but fantastic flavor, then you need to try this recipe.
It is simple to make and you will certainly please all of your guests.
Enjoy and drop me a note and let me know how you like it.

Ingredients
- 1/2 cup of your favorite barbecue sauce (I use Bull's Eye Kraft Original)
- 1/4 cup of Kraft Zesty Italian Dressing (do not substitute)
- 1 tsp. ground thyme
- 1 tsp. ground red pepper (Cayenne)
- 1/2 tsp. cinnamon
- 1/2 tsp. garlic powder
- 1/2 tsp. celery salt
- 3 lbs of chicken wings
- salt and pepper to taste
- 2 cups of canola oil (depending on the size of your pan)
Directions
Season your wings with the salt and pepper according to taste.
Heat up a large skillet on high heat and add two cups of canola oil until it reaches a frying temperature. It is a good idea to have a kitchen thermometer in your kitchen.
When the temperature is at 350 to 375 degrees add the chicken. The temperature will drop to around 300 to 325 degrees which is where you want to keep it. If you prefer to use a deep fryer that is good also. Do not crowd the pan, so only one layer of chicken not touching each other.
Mix all the other ingredients in a medium bowl and stir until it is well combined. Using a container that has a tight fitting lid.
When the chicken reaches 165 degrees which takes about 10 minutes. You will see the wing rise to the top, cook until it is a nice golden brown.
Remove from heat and place on a plate with a paper towel to take the excess oil off of the wing.
Place in container with seasonings, cover and shake good until the wing is properly coated.
Remove wings from seasonings and serve, continue the process until all your wings are cooked and ready to go.
