Caribbean Banana Fritters

When I send my sons to the grocery they will always buy bananas even if it is not on my list. They do this because they want the bananas to get real ripe so I will make fritters.
They watch them on the counter and keep pressing on the skin, “Mom are they ripe enough yet.” So as you can imagine the family truly enjoys this treat.
I make them for breakfast and usually make a lot of them. I leave them out and by the end of the day they will be gone. You can try different fillings in them.
You can use your imagination and put in chocolate chips, blueberries or strawberries. Whatever your heart desires! Cook up a batch, and watch them disappear.

Ingredients
- 5 ripe Bananas
- 3 Tbsp Brown Sugar
- ¼ tsp Nutmeg
- ¼ tsp Cinnamon
- ½ tsp Vanilla extract
- pinch Salt
- 1 cup all-purpose Flour
- 1-2 Tbsp Cooking Oil
- 1 Tbsp granulated Sugar
- 3 tbsp heavy cream
- ¼ cup of confectionery sugar
Directions
1 Mash bananas with a potato masher. Add the spices and sugar, leaving out the confectionary sugar. If you are going to add raisins, add them now.
2. Place your frying pan on high heat, once the pan is warm add 2 tablespoons of canola oil, when it is hot add the banana fritter mixture. Reduce the hear to medium. I find it is easy to use a soup laddle and depending on the size of fritter you want, fill it accordingly and spoon into the hot oil.
3. Fry fritters under they are golden brown on each side. This will be about 3 minutes on each side, be careful not to burn them, if the oil is too hot reduce the temperature to between medium and low.
4. Remove fritter and place on a paper towel.
5. Sprinkle with confectionary sugar and serve warm.
